Thailand Doi Pangkhon, Ata Farm - Honey process
This is one of a trio of coffees, each from the same harvest, but each using a different process to remove the fruit from the seed (or coffee bean). The farmers of Ata Farm as well as the millers at Beanspire have done a great job growing and processing 3 very high quality and flavorful coffees.
This coffee was processed using a ”honey” process. Some of the fruit is removed, but not all before the the coffee cherries are dried on raised beds under cover and are turned regularly. They become sticky and look as if they were covered in honey, thus the name for this process.

Along with the attention given to growing and processing the coffee, the mineral-rich soil and next-to-perfect growing conditions result in a surprising complexity and an intensity of flavors. This sparked Ata and Pupae, brother and sister and third generation coffee growers, to actively seek the involvement of specialty buyers. Thanks to the exporter Beanspire, we can now offer several microlots from a specialty origin that deserves more attention worldwide.
